Here’s my simple little receipe for a light dessert. You will need: Two tubs of Mascapone cheese One packet of sponge fingers Two lemons 75ml of Limoncella (available in most supermarkets, it’s the yellow spirit) Firstly grate the rind of the lemons and leave it on a seperate plate. Then cut the lemons in half and juice them, making sure you filter out all the pips. Take a large dish and then cut the sponges down the centre carefully so that they split in half. Use them to cover the base of the bowl. Gently heat the lemon juice until it is just steaming and then drizzle it over the sponges. Spoon the Mascapone cream into a mixing bowl and add the limoncello. Mix it with a fork, until the mixture goes smooth and a pale lemon colour. Now, using the spoon and fork spoon it over the top of the sponges and flatten it with a spatula. Sprinkle the lemon rind over the top and leave to set for about half an hour. Eat and enjoy. Regards
